Coconut Flour Peanut Butter Chocolate Chip Cookies

Ingredients

1/2 cup peanut butter (alternatives: almond butter)

2 tablespoons coconut oil

1/2 cup of coconut sugar

2 large eggs

1 1/2 teaspoons of pure vanilla extract

1/2 teaspoon baking soda

14 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup coconut flour

1/2 cup chopped dark chocolate or chocolate chips

Instructions

  1. Preheat oven to 350F. Line cookie tray with parchment paper.
  2. In a food processor add peanut butter, coconut oil and coconut sugar. Process it until smooth.
  3. Add the eggs and the vanilla extract into the processor and process it until well incorporated.
  4. Once the ingredients are mixed well, add baking soda, cinnamon, salt and coconut flour. Process it until it forms a smooth dough.
  5. Once the dough is formed add in the chocolate chips and gently fold it with a spatula until evenly distributed.
  6. Scoop the dough with a spoon and place the dough on the cookie sheet. Make sure that they are portioned evenly and are flattened. (Heads up: cookies don’t spread during baking)
  7. Bake for 8-10 min or until the cookies are just golden. The cookies will be soft when they are out of the oven, let it cool on the sheet for 5 minutes before being transferred to the wire rack to finish cooling.
