Cinnamon is one of the oldest and most commonly used spices in the world. Although Cassia(Chinese Cinnamon) is the vastly available “Cinnamon “in the world market, “True Cinnamon” or “Real Cinnamon” is the Ceylon Cinnamon Cinnamomum zylanicum grown in Sri Lanka. As the name implies cinnamomum zylanicum is endemic to Sri Lanka. The unique fragrance, warm and sweet taste of the cinnamon is more refined and subtle in “Ceylon Cinnamon”. The “Ceylon Cinnamon” quill is golden brown in colour, multilayered and has a very delicate texture where as Cassia has a darker colour and a thicker hollowed quill.

Other than the numerous proven health benefits, “Ceylon Cinnamon” contains only a negligible amount of coumarins (a naturally occurring plant component that can have strong anticoagulant properties), whereas Cassia contains considerable amount. Excessive intake of coumarins over a prolonged period of time can pose health risks to some individuals. For this particular reason organizations like the Federal Institute of Risk Assessment in Berlin, Germany have recommended that large amounts of the Cassia Cinnamon be avoided.

Cinnamon’s unique healing abilities come from three basic types of components in the essential oils found in its bark. These oils contain active components called cinnamaldehyde, cinnamyl acetate, and cinnamyl alcohol, plus a wide range of other volatile substances.
