Coconut sap is collected by tapping the inflorescences of the coconut plant. To collect the sap farmer ties the inflorescences into bunches and gently slices the tip of the flower spike to create a cut that leaks pure nectar. A container is attached to capture the nectar for the next 6-8 hours which yields about half a litre per tree.
