Coconut Oil Banana Bread

  • 4 ripe bananas

  • ⅓ cup coconut oil

  • ¾ cup sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp cinnamon powder

  • ½ tsp salt

  • ½ cup chocolate chips or nuts (optional)

  1. Preheat the over to 350°F. Grease a 9''x5'' loaf pan.

  2. In a large mixing bowl, mash bananas with a fork. Add the coconut oil and sugar to the bananas and beat with a fork until smooth.

  3. Beat in the eggs and vanilla.

  4. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

  5. Slowly add the flour mix to the banana mix, using a rubber spatula or fork to blend. Do not over-mix! Add in chocolate chips/nuts, if using.

  6. Add the batter to the prepared loaf pan and bake for 55 minutes, or until a sharp knife inserted in the centre comes out clean. Cool for 10 - 15 minutes.
