4 ripe bananas
⅓ cup coconut oil
¾ cup sugar
2 large eggs
1 tsp vanilla extract
1 ¾ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon powder
½ tsp salt
½ cup chocolate chips or nuts (optional)
Preheat the over to 350°F. Grease a 9''x5'' loaf pan.
In a large mixing bowl, mash bananas with a fork. Add the coconut oil and sugar to the bananas and beat with a fork until smooth.
Beat in the eggs and vanilla.
In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
Slowly add the flour mix to the banana mix, using a rubber spatula or fork to blend. Do not over-mix! Add in chocolate chips/nuts, if using.
Add the batter to the prepared loaf pan and bake for 55 minutes, or until a sharp knife inserted in the centre comes out clean. Cool for 10 - 15 minutes.
