3 salmon fillets
4 tbsp coconut oil, divided
3 tsp Creole seasoning mix, divided
½ tsp each garlic powder, onion powder, paprika, salt, pepper
1 squeezed lemon
1 cup broccoli florets
1 cup cauliflower florets
1 cup chopped carrots
1 cup sliced zucchini
Melt 3 tbsp of coconut oil on medium heat in a large pan.
Add salmon, seasoned with ½ tsp of the creole seasoning mix on each fillet, to the pan. Cook for 8 minutes and then carefully flip. Add the remaining ½ tsp of creole seasoning mix to each fillet, and cook for 8 minutes. Remove salmon from heat and sprinkle with lemon juice.
Steam vegetables for 8-10 minutes.
Add the steamed vegetables to a large bowl, add 1 tbsp of coconut oil, lemon juice for taste, and the garlic powder, onion powder, paprika, salt, and pepper seasoning mix. Toss to coat evenly.
Plate the salmon and vegetables. Enjoy!
