Pan-Seared Coconut Oil Salmon & Veggies

  • 3 salmon fillets

  • 4 tbsp coconut oil, divided

  • 3 tsp Creole seasoning mix, divided

    Or

  • ½ tsp each garlic powder, onion powder, paprika, salt, pepper

  • 1 squeezed lemon

  • 1 cup broccoli florets

  • 1 cup cauliflower florets

  • 1 cup chopped carrots

  • 1 cup sliced zucchini

  1. Melt 3 tbsp of coconut oil on medium heat in a large pan.

  2. Add salmon, seasoned with ½ tsp of the creole seasoning mix on each fillet, to the pan. Cook for 8 minutes and then carefully flip. Add the remaining ½ tsp of creole seasoning mix to each fillet, and cook for 8 minutes. Remove salmon from heat and sprinkle with lemon juice.

  3. Steam vegetables for 8-10 minutes.

  4. Add the steamed vegetables to a large bowl, add 1 tbsp of coconut oil, lemon juice for taste, and the garlic powder, onion powder, paprika, salt, and pepper seasoning mix. Toss to coat evenly.

  5. Plate the salmon and vegetables. Enjoy!
